The production of Prosciutto di Parma is strictly regulated, ensuring it is made exclusively from the hind legs of specially selected heritage breed pigs. These pigs are raised in 11 specific regions of Italy, where their rearing is closely monitored, inspected, and traced by the Consorzio, which guarantees the highest standards of quality. The process of creating Parma Ham is meticulous and requires great attention to detail. Each producer of Prosciutto di Parma has a singular aim: to cure a pork leg using pure sea salt, ensuring the meat remains sweet and tender. Originating from the rear haunches of the pig, the curing process is meticulously managed to allow the ham to absorb just enough salt to preserve it effectively. During this time, the ham undergoes significant moisture loss, shedding more than a quarter of its weight.
