The process begins with a meticulously fermented sourdough starter, which is left for 16 hours to develop a unique, understated flavour. The dough is then slowly rolled out until it attains a delicate thinness, after which it is lightly dusted with rye flour and slowly baked to perfection, resulting in a dappled, crisp, and intriguingly wobbly texture.
