Description Fresh White Spring Truffles Fresh Italian White Spring Truffles – Tuber Borchii – also known as “Bianchetto” (meaning “Whiteish” Truffles) are found from March to mid April and are hunted wild for us in the hills of Umbria and Tuscany, Italy. Their season is short – only around 6 weeks. They are much smaller in size than the white winter truffles, and tend to be around 10-20g in weight on average. They can vary in colour and range from yellowy cream, to an orangey brown colour. White Spring Truffles have a lovely garlicky truffle aroma and pair wonderfully with eggs, cheese, mushrooms, asparagus and wild garlic. The interior is usually a light caramel to milk chocolate colour. As a White truffle, the outside “skin” of the truffle is softer than its Black cousins, so they can be hard to clean with a brush (a very soft nail brush can work). They should not be washed with water, but instead any dirt should be removed with a pairing knife. These fresh truffles can be shaved as thin as possible over hot, buttery, savoury dishes. How to Store and Care for Fresh White Spring Truffles Step 1: Unpack Immediately Remove your fresh truffles from the vacuum-sealed packaging as soon as they arrive. Truffles are living fungi, which means they need to breathe. If left in sealed packaging for more than two days, they will begin to spoil due to lack of air circulation. Step 2: Proper Storage Place the truffles in an air-tight container lined with dry paper towels. Store them below 6°C, ideally in the fridge. Allow the Truffle to air-dry each day, ensuring all surface moisture has evaporated. Replace the paper towels daily to keep moisture levels down and ensure the truffles stay dry and fresh. If cared for properly, fresh White Spring Truffles can last up to 5 days. Pro Tip: Never store fresh truffles with rice.
