Cabrales P.D.O. is a famous Spanish cheese from Asturias, renowned globally. It is a natural cheese made in the traditional artisanal way by rural family dairy farmers in the Cabrales region, located in the heart of the Picos de Europa mountain range in Spain. This PDO certification allows for the production of Cabrales cheese using either raw cow milk or a combination of cow, sheep, and goat raw milks, depending on milk availability in the region. The milk is solely obtained from cattle registered under the PDO that graze in the mountain pastures. Our Cabrales is currently made from Spanish full fat raw´s cow milk and matured in a natural cave. The aging process of Cabrales P.D.O. occurs over four months in natural limestone caves with high humidity, creating optimal conditions for the growth of penicillium molds, resulting in distinct blue-green veins throughout the cheese. Cabrales cheese presents a dense yet crumbly texture, paired with a unique, strong, and sharp flavor profile that appeals to fans of intense cheeses. Its scent is equally strong, typical of aged blue cheese. Combining Cabrales with Bonvallis Olive Oil Tortas, fresh bread, or crackers enhances its flavor profile and makes a delightful addition to any tapas selection. It also serves as a great ingredient in sauces to complement meat or vegetable dishes. For a perfect ending to a meal, Cabrales pairs wonderfully with fruit platters and is best enjoyed with local ciders or chilled sweet wines.
