Description Leonards Premium Gluten Free Rusk 10kg Unlike some other Gluten Free Rusks, which are 100% yellow pea, our Leonards product took us 5 years to develop, is a blend of Potato Starch (from a very specific type of potato), Rice Flour, Salt and Dextrose, and manufactured in a way very similar to the more normal pinhead rusk. This means it is extruded, baked, crumbed and then baked again, giving the distinctive texture and mild taste. Some other Gluten Free Rusks are simply extruded and sliced, which means the rehydration factor is only 1.2-1.5%, whereas ours is 1.5-1.7% and without the pea taint you can sometimes get.
