Encased in a white, light, bloomy, and edible mould-ripened rind, it boasts an intense amber paste highlighted with deep red chili flakes. As time passes, the cheese undergoes a fascinating transformation; the white rind becomes less dense, developing a light brown hue, while the core, initially present at the start of its life, gradually ripens through its lifespan. The aroma of this cheese is a captivating blend of earthy, mushroom notes from the rind. Upon slicing, you are greeted with a fresh, milky scent featuring light lactic and savoury hints from the chili and garlic. As the cheese matures, the aroma becomes more pronounced, maintaining a creamy essence with subtle lactic undertones. Toward the end of its life, slight ammoniacal notes may emerge.
